- Prepare 500 gm bitter gourd
- Prepare 3 tbsp Salt

- First, wash the bitter gourd and remove it's skin. If it's long you may cut it into two.
- Now add salt to the gourd such that it costs it well. Keep it aside for an hour.
- After an hour, you would find the gourd would have turned tender. Squeeze water. And gently remove the core with a spoon or a scooper.
- Now, in a pressure cooker, add these gourds and water. Cook it for 1-2 whistle.
- Meanwhile prepare the stuffing. Dry roast gram flour (besan).
- Once cooled, add turmeric powder, chilli powder, dhaniya-jeera powder, garam masala, salt, sugar,amchur powder, oil and fresh coriander. Mix and keep aside.
- When the pressure settles down drain the pieces of gourd, gentle dry it and fill it up with the besan spice mix.
- Heat oil in a pan/kadai, add jeera, asofatida, and gradually put all the pieces of gourd, making sure it doesn't break.
- Cook it on medium flame to make the outer crust a lil bil crispy. Rotate the pieces gently.
- Add spices and give a mix. Cover and turn the flame off.
