  3. Make a purée of tomatoes.
  4. In a wok heat oil and add the baigans. Deep fry them. Set aside. Cool them and insert the paste of coriander, red chilli, aamchur, turmeric and salt. Set aside.
  5. In the same wok add oil and add the small onions, stir. Sprinkle some water and cook covered for 8 mins. Add the tomato purée, coriander powder, green chillies, turmeric powder and salt. Stir well so that everything is coated well.
  6. Add the baigans and stir well. Cover and cook for 5 mins.
  7. Plate and enjoy with Roti or Paratha.
