  1. Take 250 gms (Gilki)Sponge Gourd -
  2. Take 2 tbsp Roasted Gram Flour Besan
  3. Make ready 1 Tsp Red Chilli Powder -
  4. Take 1 Tsp Turmeric Powder -
  5. Prepare 1 Tsp Dry Mango Powder Amchur -
  6. Make ready 2 tbsp Coriander chopped
  7. Make ready As required Water
  8. Make ready 1 Tbsp Mustard Oil
Instructions to make Bharwa Gilki:
  1. In a mixing bowl add roasted besan, red chilli powder, turmeric powder, dry mango powder, coriander powder, salt to taste and finely chopped coriander. Mix well.
  2. Add little water to make a fine paste.
  3. Peel and cut gilki into 2-3 inches.
  4. Slit gilki vertically and fill the stuffing.
  5. Heat oil till it reaches smoking point.
  6. Switch off the flame and let it cool a bit. - Switch on the flame. Place stuffed gilki and cook for a min.
  7. Flip and let it cook. Cover and cook for 2-3 mins.
  8. Uncover and cook on a low flame till tender.
  9. Do not stir a lot, just flip as and when required.
  10. Make sure not to overcook the gilki.
  11. Serve hot with roti.
