  3. Dry roast peanuts and coconut until slightly browned.
  4. Add the roasted ingredients in blender along with onion and ginger and make a paste.
  5. Add little water if required.
  6. Add salt, fresh coriander and tomato in the mixture and mix well.
  7. Stuff this mixture in the brinjals.
  8. Keep the remaining mixture aside.
  9. Heat vegetable oil in a pan.
  10. Once the oil is hot, add garlic and turmeric and fry until browned.
  11. Add the stuffed brinjal and fry for 5 minutes.
  12. Mix the remaining masala with water and add it in the pan.
  13. Cover and cook until brinjal are cooked.
  14. Garnish with fresh Coriander.
