Instructions to make Dahi baigan:
  1. Firstly take eggplant rinse and cut in to 4 pieces keep it aside.
  2. In a big blender jar add curd, mint leaves, ginger, garlic, green chilli now blend till smooth.
  3. Heat the wok with 2 tsp mustard oil then put eggplant saute it few minutes on medium flame add 1tsp turmeric powder, 1tsp Kashmiri red chilli powder, 1tsp salt mix it properly with a spatula.
  4. Shallow fry until it becomes nice golden colour, Now transfer on the plate.
  5. Now add remaining oil in the same wok add mustard seeds crinkle it once add prepared curd remaining turmeric powder, Kashmiri red chilli powder, meat masala powder half cup water mix it well it on low flame, stir it 3 to 4 mins add fried eggplant and again simmer for 3 min lastly add some salt.
  6. Turn off the flame and serve it hot.
