- Get black brinjal (400 gms)
- Make ready tomato chopped
- Take chopped onions

Steps to make Baingan Bharta:
- Slightly slit the brinjal vertically in 4-5 areas. Insert green chillies and garlic in these slits. Grease the brinjal with oil. This will help in peeling the skin easily after its cooked.
- Place the brinjal directly on the burner..keep flipping it while roasting. Roast uniformly till its soft
- Peel the skin and smash the cooked brinjal and keep aside
- In a kadai add oil and add ginger, garlic and chillies. Saute for some time and then add chopped onions to it
- Once the onions are fried add turmeric, coriander powder,red chilli powder,salt and saute well.
- Add the tomatoes to the mixture and cook well
- Once the raw smell of masala disappears add the mashed brinjal to the kadai
- Mix well and then add the coriander leaves
- When the bharta becomes smooth and mushy switch off the gas.
- Serve hot with rotis or bhakri
