Steps to make Baigan ka Bhartha:
  1. Take an eggplant big size especially to make bharta.Wash and rinse well.Cut it in the centre just to check that there are no worms inside.
  2. Then Switch on the gas fire.Place the eggplant directly on it.
  3. Roast it properly on gas fire
  4. Change the position of eggplant so that all the sides are evenly roasted well.Once done switch off the fire and remove the eggplant from the gas and place it on plate.
  5. Let it little cool down then peel the skin part of roasted eggplant. Mash it with hands. Keep aside.
  6. Chop onions, wash well tomatoes, chili and ginger and chop it.
  7. Also boil green peas for five to six minutes and keep aside
  8. Now take a kadhai place it on gas fire,switch on the fire on gas,heat well,then add oil.Once heated well add onion,green chilli, ginger. Roast it on medium to high flame for around 2 minutes,then let it cook on low flame.Stir in between and and
  9. After few minutes the onions would turn translucent and cooked well.colour, then and tomatoes.Let the tomatoes cooked 2 to 3 minutes on medium to high flame,stirring continuously.
  10. Now add green peas,roasted eggplant.Mix and mash it all nicely.
  11. Then add all masala salt,red chilli powder, coriander powder,garam masala powder.
  12. Mix all the ingredients together nicely.
  13. Sprinkle 2 to 3 tablespoon of water on it and cover the kadhai and let it cook on low flame for 7 to 8 minutes.In between check and stir. Cook until everything is cooked properly.
  14. If required sprinkle 2 tablespoon water more and stir nicely. By the time bhadta is cooked well. Switch off the gas fire.
  15. The bharta is ready to be served.Garnish with fresh coriander leaves. Serve hot with chapati,paratha or along with dal rice.Its your choice.
  16. While serving add little ghee on bharta,it taste awesome. This part is optional.
