- Slice carrots,cabbage drain water from sweet corn and mix all with salad cream.slice cucumber and fresh tomatoes by the side.
- Parboil the rice,rinse and keep aside.
- Fry onion,tomato paste in vegetable oil,add salt,pepper,curry and turkey stock and more water when is boiling add the parboiled rice stir add seasoning cubes cover to boil untill rice is soften.rinse and add green peas and sliced carrots stir together and off the heat.
Other variations of jollof rice include; coconut jollof rice. Note: If you prefer the coleslaw creamier, you can increase the quantity of the salad cream. Feel free to add a pinch of ground pepper if you like it spicy. Coleslaw can be eaten alone or as a side dish to Jollof Rice, Coconut Rice, Fried Rice and other Nigerian rice dishes. For the rice, heat the oil in a large pan and cook the onions over a gentle heat until translucent.
