Instructions to make Chana samosa chat shots:
  1. Pressure cook soaked chickpeas with turmeric powder and 1½ cup of water for 3-4 whistles.
  2. Heat oil in a pan,add cumin seeds,let them splutter,add chopped onions,saute them till they turn translucent.
  3. Add ginger and garlic paste,saute till raw aroma goes away.
  4. Add chopped tomatoes, coriander powder, red chilli powder,fry it well till the tomatoes become soften.
  5. Add boiled chickpeas(separate extra water and keep aside for later use),fry it for couple of minutes,add salt,garam masala powder, again fry for a minute.
  6. Add about half cup of water (from extra water),cook for a couple of minutes in high flame,stir constantly.
  7. Add dry mango powder, chopped coriander leaves,give a mix,chana masala is ready.
  8. For samosa;dry roast cumin seeds, coriander seeds, fennel seeds in low flame for a minute,cool it and prepare a coarsely ground masala powder.
  9. Heat oil in a pan,add prepared coarse ground masala powder.
  10. Add boil potatoes,salt, turmeric powder, cumin powder,red chilli powder, saute it for a while.
  11. Add green peas, moong dal, sweet corn, chopped green chillies,saute it for couple of minutes.
  12. Add garam masala powder,chaat masala powder coriander leaves,smash potatoes with the spatula and saute it for a minute,put out the flame, samosa stuffing is ready.
  13. Mix flour and water well,and prepare the slurry.
  14. Take a samosa sheet,fold one corner of the sheet on the opposite side to form a triangle, again fold entire triangle,seal the edges with slurry,now the cone is form.
  15. Fill the cone with stuffing (don't overloaded).
  16. Fold it again,seal the edge with slurry,cut the extra sheet.
  17. Prepare all samosas in same process.
  18. Heat oil in a deep pan,fry samosas in medium flame, till they turn golden brown in colour from all sides, drain on an absorbent paper.
  19. For assembling; in a shot glass first put 1/4 th part with chana masala,then layered with some broken samosas.
  20. Now layer with yogurt, coriander-mint chutney, tamarind chutney, chopped cucumber, chopped onion, chopped coriander leaves, drizzle with some lemon juice, sprinkle some black salt,chaat masala, chilli flakes, lastly add sev, pomegranate and topped with a samosa, serve immediately, enjoy.
